Don't get me wrong, I love whipped mashed potatoes.
But every once in a while you want to mix things up and that's where these mashed potatoes made with new potatoes come in. New potatoes are great for this recipe because they are naturally creamier than traditional russet potatoes.
Feel free to mash a lot or mash a little. It's your prerogative. Just stir the pot until they reach a consistency you like.

- 10 new potatoes
- 1 bunch of chopped spring onion (or chives)
- 1 tablespoon of minced garlic
- 3 tbsp of butter
- salt
- pepper

Total: 40 minutes
- Preparation: 15 mins

- Large pot
- Cutting board
- Knife
- Heavy spoon
Method
- Fill a large pot 2/3's of the way full with room temperature water, salting water liberally. Place on stove to boil over high heat.
- It is important not to drop potatoes into boiling water, as it will result in potatoes which are not cooked evenly.
- In a sauce pan, combine butter, spring onion and garlic and cook over high heat for about 2 minutes.
- When potatoes are fork tender, remover from heat and drain water, reserving at least a half a cup of the boiling liquid to adjust the consistency of the potatoes.
- Add butter, spring onion and garlic mixture to potatoes and stir. Salt and pepper to taste. If potatoes are a little this mix in a splash of the cooking liquid.
